Reducing sugar includes all monosaccharides (which cannot undergo further hydrolysis). Disaccharides without aldehydic or ketonic groups, like maltose and lactose, function as reducing sugars. A monosaccharide is galactose (C6H12O6). It is just as sweet as sugar.
