It is an extra version of taste that is added to our plate with a variety of dishes kept in front of an individual. There are some common and mandatory ingredients that are needed in every pickle, which increases its shelf life and also acts as a preservative for the pickle.

Top ingredients needed for almost every pickle made in our country are sunlight, salt and mustard oil. They act as preservatives and keep the pickle as it is for a longer period of time. Rest ingredients may vary and includes the very first ingredient is fruit or vegetable of which pickle has to be made and then secondary level comes up with the spices like chilli powder, coriander seeds, fenugreek, onion seeds, asafoetida, cumin seeds and many more. Here we are going to talk about the recipe of most favourite pickle of we Indians i.e. ‘Mango pickle’.
Take medium sized raw mangoes and wash them well and cut them into slices, remove all the seed from inside, now mix these slices with salt in a bowl and mix it thoroughly. Here comes the time of sun drying cover the bowl with a cotton cloth and keep it under the sunlight for about 10 days, now as mango gets shrink mix with these spices which includes dry red chillies, cumin seeds, mustard seeds, fenugreek and asafoetida. Lastly steps involve little oil in a pan on low flame, put some more mustard seeds and allow them to crackle now, put all mango slices and stir well to cover each and every slice with oil and spices and keep it undisturbed in an airtight container in the sunlight. Pickle is ready to eat after a week.
