Water is the molecule in which the two hydrogen atoms are bonded to an oxygen. The two hydrogen atoms are positively charged and the oxygen is negatively charged. This structure and the charges give it the property of polarity.
Due to this property;
Water is known to have high cohesion properties i.e. it sticks to similar molecules strongly.
It is known as the universal solvent as it can dissolve anything in nature. When a polar molecule is dissolved in water, the positive end of the molecule will attract to the negative end of water and vice versa. This causes the uniform distribution of molecules.
Due to the hydrogen bonding, water has high surface tension too. Surface tension on the open end of water acts as a skin on it allowing lighter material to float over it without actually dissolving in water.
Polarity also allows the capillary action of water through blood streams and plant roots.
